Marine Room Chef Inducted Into Academie Culinaire De France

image4The Marine Room, a San Diego landmark and award-winning coastal treasure for over 75 years, is pleased to announce Executive Chef Bernard Guillas’ induction into the Académie Culinaire de France (French Culinary Academy) on Monday, June 17, 2018 at the French Consulate in New York City.

This honor is bestowed annually on a select group of chefs – all trained by French chefs – who exemplify the organization’s mission to carry on the great tradition of culinary excellence. This year’s ceremony included the induction of six highly respected chefs, including American chef Thomas Keller, owner of the French Laundry in Napa Valley.

Guillas – who in 2011 was inducted into the groups’ sister organization, the Maîtres Cuisiniers de France – has been instrumental in upholding the rich traditions of The Marine Room for 24 years. Under his direction, the San Diego landmark has introduced exciting programs and events, including the popular High Tide Breakfast and Dinners, Le Voyage Dinner Tastings, and annual Cooking Class series, which Guillas co-hosts with Chef de Cuisine Ron Oliver. His partnership with Oliver has also led to the publication of two highly acclaimed, award winning cookbooks and accolades for the world-renowned restaurant, including its recent recognition as “Best French” by the San Diego Chapter of the California Restaurant Association.

An avid culinary explorer, Guillas has a roster of impressive credits that include appearances on The Today Show, Martha Stewart Radio, Food Arts Magazine and the Discovery Channel’s Great Chefs of the World television series. He has been guest chef multiple times at the James Beard House in New York and he has been named Chef Magazine’s Chef of the Year and San Diego’s Best Chef numerous times.

Chef Guillas promotes sustainability and plays an active philanthropic role in supporting events benefiting local charities while infusing the San Diego culinary scene with his unique talent and engaging personality. “Le Voyage” Table Tasting Dinner – Embark on a global culinary journey with this new, six-course, prix fixe tasting menu designed by Executive Chef Bernard Guillas and Chef de Cuisine Ron Oliver. La Jolla learns to Cook, Wine and Dine from Chefs at the Marine Room

This week, I attended a cooking demonstration and 3-course dinner plated and created by the famous chefs of the Marine Room. The landmark restaurant sits on La Jolla’s sandy beach, inviting the tides to lick its windows. Wednesday night had a dramatic backdrop of storm clouds behind a group of almost 50 guests seated and swirling complimentary glasses of Sauvignon Blanc.

I was able to talk with Chef Bernard Guillas before the demonstration. Like an artist, he described the canvas (a white plate) he and Chef Ron Oliver would be painting (filling with food). The meal’s theme was “Hunting Games” celebrating the hunting season and the season of comfort food. The appropriately named sommelier, Lisa Redwine, worked with Guillas to hand-pick a selection of red wines to pair with each course.

It was not a hands-on cooking class, but the chefs threw out a wealth of information. Every person in the room could watch the chefs slice, saute and spice the food easily in the angled mirrors on the ceiling. Like a well-rehearsed comedy act, they interacted with the audience well, playing up their contrasting personalities. Charismatic Chef Bernard bantered and winked while the soft-spoken Chef Ron quipped back with dry humor.

Couples Retreat at La Jolla Hotels

The Marine Room – The Marine Room features a 4 course prix fixe menu including choice of appetizer, first course, main course and dessert.  The seafood inspired menu that includes crab cakes, sea bass, lobster tail and more is available on Valentine’s Day for $125 per person.
