Marine Room Chef Inducted Into Academie Culinaire De France

image4The Marine Room, a San Diego landmark and award-winning coastal treasure for over 75 years, is pleased to announce Executive Chef Bernard Guillas’ induction into the Académie Culinaire de France (French Culinary Academy) on Monday, June 17, 2018 at the French Consulate in New York City.

This honor is bestowed annually on a select group of chefs – all trained by French chefs – who exemplify the organization’s mission to carry on the great tradition of culinary excellence. This year’s ceremony included the induction of six highly respected chefs, including American chef Thomas Keller, owner of the French Laundry in Napa Valley.

Guillas – who in 2011 was inducted into the groups’ sister organization, the Maîtres Cuisiniers de France – has been instrumental in upholding the rich traditions of The Marine Room for 24 years. Under his direction, the San Diego landmark has introduced exciting programs and events, including the popular High Tide Breakfast and Dinners, Le Voyage Dinner Tastings, and annual Cooking Class series, which Guillas co-hosts with Chef de Cuisine Ron Oliver. His partnership with Oliver has also led to the publication of two highly acclaimed, award winning cookbooks and accolades for the world-renowned restaurant, including its recent recognition as “Best French” by the San Diego Chapter of the California Restaurant Association.

An avid culinary explorer, Guillas has a roster of impressive credits that include appearances on The Today Show, Martha Stewart Radio, Food Arts Magazine and the Discovery Channel’s Great Chefs of the World television series. He has been guest chef multiple times at the James Beard House in New York and he has been named Chef Magazine’s Chef of the Year and San Diego’s Best Chef numerous times.

Chef Guillas promotes sustainability and plays an active philanthropic role in supporting events benefiting local charities while infusing the San Diego culinary scene with his unique talent and engaging personality. He travels extensively throughout the world promoting The Marine Room restaurant and the San Diego region.

Fans of The Marine Room rejoice! A NEW tasting menu available at The Marine Room, “Le Voyage,” available Wednesday and Thursday evenings.

The Marine Room, a San Diego landmark and award-winning coastal treasure for over 75 years, invites you to celebrate Spring and join them for their new “Le Voyage” Tasting special, as well as their highly anticipated High Tide Dinners. With sweeping panoramic views of La Jolla Shores, culinary excellence and first-class service, they invite you to be amazed by the incomparable ocean-front experience The Marine Room offers.

“Le Voyage” Table Tasting Dinner – Embark on a global culinary journey with this new, six-course, prix fixe tasting menu designed by Executive Chef Bernard Guillas and Chef de Cuisine Ron Oliver. Le Voyage is a dining experience showcasing signature dishes from the restaurant’s dinner menu including Ocean Trilogy (Lobster Medallion, Ahi Tuna Tartare, Hiramasa Sashimi) Main Diver Scallop and Hudson Valley Foie, Cervena Farm Elk Medallion and a “Share the Love” dessert quintet. The monthly evolution of the Le Voyage menu will feature unique ingredients provided by the goodness of Mother Nature’s Land and Sea. Available Wednesday and Thursday evenings. High Tide Dinners – The Marine Room welcomes their signature High Tide season back this spring with dinner dates starting in April. With numerous anticipated high tide dates, you’ll have plenty of opportunity to see nature in action and witness eye-level waves crashing against the thick, protected, floor-to-ceiling windows of The Marine Room. High tides typically range between 4 and 5 feet above sea level, so the predicted 6- to over 7-foot high tides during these special evenings will make dining at The Marine Room a memorable experience. Enjoy a seasonal menu with à la carte choices fresh from the farmer’s market and nightly dinner specials.
