The long-awaited Galaxy Taco is finally open at the Shores! Executive Chef Trey Foshee of George’s at the Cove is putting a gourmet twist on the traditional taco, using fresh and high-quality ingredients.
Situated in the row of restaurants on Avenida de la Playa, Galaxy Taco is a colorful addition to La Jolla’s restaurant scene. Bright colors abound–in the decor, the furniture, and the food–and the atmosphere is very warm and inviting.
According to Chef Foshee, the only things taken seriously at Galaxy Taco are the quality of ingredients and the customer’s experience. “Good, solid Mexican food” is the name of the game at this new eatery: only the freshest ingredients are used to make every item on the menu, and tortillas are made fresh daily from non-GMO heirloom corn.

Chef Foshee’s own “Tacolandia” taco–a creation he entered in last year’s Tacolandia (pictured above) Festival in LA–is featured on the menu: a delicious combination of slow-roasted pork topped with chicharrones and jalapeño-cabbage slaw.
In addition, Galaxy Taco boasts one of the largest varieties of tequilas and mezcals; Benchmark Brewing, a local brewery, has even developed a Galaxy Corn Lager just for Galaxy Taco. All cocktails are made without a blender, and range from the classic Margarita to the Margarita Zanahoria–a margarita made with tequila, carrot, orange, lime, agave nectar, and black pepper featuring a wild celery salt rim (pictured right).
Above all else, the team at Galaxy Taco strives to serve food made from quality ingredients in an atmosphere that reflects the joyful vibrance of Mexican culture. So far, they’re on the right track–stop by and see for yourself!
