El Pescador Fish Market has been serving some of the best seafood in San Diego since 1974. 0.25 bay shrimp
0.25 squid (tubes and sliced tentacles)
1/2 of a persimmon
1 small garlic clove minced
1 quartered avocado
1 white asparagus
1 teaspoon of fresh dill
1/2 teaspoon of curry powder
1/8 of cayenne pepper
1/4 cup of white wine
2 tablespoons of EVOO
1 tablespoon of unsalted butter
1/2 a teaspoon of lemon zest
salt & pepper
Lay 1 tbsp of EVOO on a hot pan and add squid, curry, and cayenne. Saute the squid to medium rare on a high flame, for about 2 minutes. Add white wine and reduce by almost half (3-5 minutes depending on your flame output from your stove range). Add bay shrimp half way through. Once reduced, take off heat, add cold butter, and stir in until blended in with the sauce. Add salt and pepper for taste.
Saute asparagus in 1 tbsp of EVOO till al dente. Add salt and pepper for taste.
Slice the avocado & persimmon and lay on a clean plate with sauteed seafood and asparagus. Garnish with fresh dill and lemon zest. Serves one. Enjoy!
