A Recipe from Chef Jason Knibb: Holiday Eggnog

holiday eggnog chef jason knibbThe incredible Chef Jason Knibb from Nine-Ten Restaurant in La Jolla has shared his official holiday eggnog recipe with us! He grew up with this eggnog (his father’s favorite) and it’s been a family tradition ever since. A combination of vanilla, heavy cream, and cognac makes this a delectable addition to a cozy evening indoors with family and friends – we can’t wait to try it.

12 Eggs (separate yolks and egg whites)
1½ cups Sugar (plus 3 tablespoons)
1 qt Milk
1½ qts Heavy Cream
3 cups Bourbon
½ cup Meyer’s Rum
2 cups Cognac
1 tblsp Vanilla

Whip egg yolks with sugar until thick. Add milk & 1 quart cream and bourbon, rum and cognac and allow to rest overnight.

On the next day, whisk 12 egg whites with 3 tablespoons of sugar and 1 tablespoon vanilla extract until stiff. Fold whites into the base made the day prior.

Whip the 1/2 quart of heavy cream (not too stiff) and set aside. Pour eggnog into your favorite holiday cup and top with whipped cream and ground nutmeg.

Serve and enjoy!
